Homemade Subs

No time to cook? Running to a soccer game, cross country meet (or fill in the blank) and you don’t want to spend money on another drive thru meal? This recipe (if you can call it that) is SO easy and comes together in under 5 minutes! You’ll look like a rockstar with this kid approved, warm in their belly, quick dinner!

1/2 pound Shaved Deli Ham, divided

8 Slices Deli Sandwich Pepperoni

4 Slices Provolone Cheese

4 Crusty Sub Buns

2 cups Chopped Lettuce (any kind)

1/2 Small Red onion, thinly sliced

3 Tbsp Balsamic Vinaigrette Salad Dressing (I prefer Newman’s Own)

2 Roma Tomatoes, thinly sliced

1/2 cup chopped black olives

Technique

  1. Preheat oven to Broil
  2. Slice Sub Buns in half lengthwise, and place on a cookie sheet. Top each bottom bun with some of the shaved ham, 2 slices of pepperoni and top with 1 slice of provolone (cut slice in half to better fit on sandwich)
  3. Place chopped lettuce in bowl and toss with balsamic dressing. Set aside
  4. Place subs in broiler and broil for 1 min or until cheese is melted and top buns are browned and toasty.
  5. Remove from oven. Top each hot sandwich with 1/4 cup of chopped lettuce/dressing mixture, a few slices of onion, 2 slices of tomato, and a sprinkling of chopped olives. Put top buns on. Slice in half and enjoy!
